About Our Training

At Cinnamon Square we are passionate about baking and are keen to educate both adults and children alike.  It is our desire to share knowledge and information with our customers and visitors.  A range of courses and workshop have been devised by Paul Barker to suit all baking enthusiasts.

Classic Cake Making Patisserie Bread Making

Take a trip down memory lane and make classics such as Victoria Sandwich and Swiss Roll. Both use very different methods to produce and make the basis of many other wonderful cakes and sponges for you to then make at home. We will teach you the theory behind each method whilst making them from scratch by hand. The Swiss roll is then layered with jam and you will learn how to roll this up without it cracking. The Victoria Sandwich will be cut in half, layered with jam and buttercream before dusting with icing sugar. You will take home both products (we provide the boxes) and proudly show them to your friends and family.

 

You will make the perfect sweet pastry which you will use to line a range of different sized baking foils. From these pastry bases you will then go on to make Tarte au Citron, Tarte au Chocolate, Fruit Tart (containing creme patisserie), Raspberry Frangipane and Strawberry Frangipane. You will learn different finishing techniques before boxing them up ready to take home (we provide the boxes). Don't be put off if you are a novice, this course is suitable for all skill levels. All the recipes used on the course are provided for you to take home.

 

The course objective of this course is to learn how to make traditional English tin bread by hand using minimal equipment. You will also learn about the science behind the ingredients, recipe and method used. This will help you when you then try to make more bread at home. You will also make an oven bottom bloomer and plaited loaf using a prefermented dough and you will also learn about sourdough bread and take one home to eat. This is one of our most popular courses and many who have taken this return at a later date for the Advanced Breadmaking Course, which focuses on prefermented and sourdough breads. Food and wine (Rickmansworth only) are provided during the course.

   
Italian Bread Making Cupcakes Art of Chocolate

During this creative Italian Bread course, you will make a variety of of Italian style breads including Ciabatta, Focaccia, Pizza, Lardo and a salt-free Tuscan bread. You will learn two very different techniques in kneading dough as some Italian bread types use a lot of water and are therefore very sticky. Food and wine (Rickmansworth only for the wine) are provided during the course.

 

The popularity of cupcakes makes this course a must try. You will firstly learn how to make sugarpaste flowers. Then you will make your own cupcake batter from scratch using only a wooden spoon to mix! Whilst baking you will return to making more sugarpaste decorations including other flowers, butterflies, hearts etc. Finally you will decorate the cupcakes with frosting and your creations. Glitter will be on hand for extra bling if required! A fun course and you leave with a dozen prize-winning cupcakes.

 

The objective on this course is two-fold. To master the technique of tempering chocolate and to discover ways to use the tempered chocolate. We will use milk, white and plain chocolate to make a figurine, moulded chocolates, nutty discs and more. Everything you make you will take home with you. This course is suited to those who love chocolate. And naturally, there is plenty of opportunity for tasting!

   
Mini Sugarpaste Cakes Advanced Bread Making Sugarpaste Cakes

This course is ideal whether a novice or have some experience in cake decorating. You will learn how to cut and fill four mini cakes and then cover them neatly with sugarpaste. Then you will create four beautiful designs to decorate your cakes. You will learn how to work with flowerpaste to create delicate flowers, butterflies and funky polka dots. The techniques you learn on this course can them be applied to other cakes. You will take home all your cakes to proudly show off to your friends and family.

 

Take a step further into the art of breadmaking and discover more about the processes that create different flavours and textures. You will learn about Sourdoughs, Poolish, Biga and Pate Fermentee. During this hands-on course you will make a Wheat & Rye Sourdough, a Wheat Sourdough, Rustic Baguette and a Stilton & Raisin Loaf. Naturally you will take these home to share with your friends and family. You will receive information about prefermented breads and how to start and preserve a sour culture. You will also take home the recipes to repeat this at home. Food and wine (Rickmansworth only for the wine) are provded during the course.

 

This course is ideal whether a novice or have some experience in cake decorating. Learn how to recreate this gorgeous parcel cake, perfect for any special occasion. You will learn how to cut and fill a cake with jam and buttercream and then the professional techniques used to cover this square cake with sugarpaste. You will then make a bow and ribbon from sugarpaste plus any other decorations you wish to enhance your creation. The techniques you learn on this course can them be applied to other cakes. You will take home your cake to proudly show off to your friends and family.
